Chia Seeds

Tiny grey-black seeds, mottled and glossy, that do something no other common seed does: dropped into liquid they form a soft gel around themselves within minutes, absorbing up to ten times their weight in water. That gelling is the whole point. It turns milk into pudding overnight, thickens a smoothie without a blender, and gives chia water its characteristic suspended texture. The flavour itself is almost neutral — mildly nutty at most — so chia takes on whatever it is put with.

How to Use
  • Chia pudding, soaked overnight in milk or a plant-based alternative
  • Stirred into water with lemon as a refreshing chia drink
  • Blended into smoothies and shakes as a natural thickener
  • Sprinkled dry over yoghurt, porridge, salads and fruit bowls
  • Baked into breads, muffins, energy bars and granola
  • Used soaked as a vegan egg substitute in baking
Directions of Use
  • For pudding, use 2 tablespoons of seed per 200 ml of liquid and refrigerate 4 hours or overnight.
  • Stir once after 10 minutes so the seeds do not settle into a single clump.
  • A typical serving is 1–2 tablespoons (15–25 g) a day.
  • Always soak before eating in quantity, and drink water alongside — dry chia absorbs liquid as it goes.
  • As an egg replacer, mix 1 tbsp chia with 3 tbsp water and rest 10 minutes.
  • Store in an airtight container in a cool, dry place away from sunlight.
Benefits
  • Absorbs up to 10 times its weight in liquid, forming a natural gel
  • High in dietary fibre, most of it soluble
  • A plant source of alpha-linolenic acid (ALA) omega-3
  • Provides plant-based protein, calcium, magnesium and phosphorus
  • Almost neutral in taste, so it suits sweet and savoury alike
  • Needs no grinding, unlike flax — the whole seed works as is
