Dried spearmint leaves, softer and sweeter than peppermint because spearmint carries far less menthol and much more carvone. The result is a rounded, gently sweet mint rather than a sharp cooling one — closer to the mint of Moroccan tea and Indian chutney than of a mint lozenge. It brews a clear, pale-green cup that is refreshing without being bracing, and it is equally at home crushed into cooking as it is steeped in a pot.

How to Use
  • Moroccan-style mint tea, brewed with green tea and sugar
  • A gentle caffeine-free infusion on its own

  • Sprinkled over salads, chaat and grilled vegetables
Directions of Use
  • Use 1 teaspoon (about 2 g) per 200 ml of water at 90–95°C, and steep 4 to 5 minutes.
  • For Moroccan-style tea, brew with green tea leaves and sweeten generously.
  • In cooking, crush between the fingers before adding to release the oils.
  • Rehydrate briefly in warm water before adding to chutneys or raita.
  • Store in an airtight container away from sunlight, moisture and strong odours.
