Dried Rosemary Leaves
Dried rosemary leaves, needle-fine and deep grey-green, holding the resinous pine-and-citrus aroma that makes rosemary one of the most recognisable herbs in any kitchen. Drying concentrates the essential oils, so dried rosemary carries further than fresh — a little goes a long way. It is a roasting herb above all: it belongs with potatoes, breads, olive oil and slow-cooked dishes, and it also brews into a clean, faintly bitter herbal infusion.
