Karela Powder (Bitter Gourd)
Bitter gourd, dried and milled to a fine green powder. Karela is the most uncompromisingly bitter vegetable in the Indian kitchen, and drying concentrates that character rather than softening it. It has a long history in Ayurvedic practice and in everyday South Asian cooking, where the bitterness is treated as the point rather than a problem. As a powder it is usually taken in water or buttermilk instead of being cooked.
