White quinoa is the mildest of the quinoa varieties — small pale seeds that cook in about fifteen minutes into light, separate grains, each with a visible curled germ ring. It is botanically a seed rather than a cereal, which is why it contains no gluten. Its appeal is practical as much as nutritional: it cooks faster than rice, holds its shape in salads without going sticky, and carries a mild flavour that takes dressing and spice readily.

How to Use
- A lighter, faster-cooking alternative to rice
- Cold grain salads, buddha bowls and tabbouleh
- Stirred into soups, stews and khichdi
- As a breakfast porridge cooked in milk with fruit
- Used in upma, pulao and stuffed vegetables
- Baked into patties, tikkis and veggie burgers
Directions of Use
- Rinse thoroughly in cold water before cooking — this removes the natural saponin coating that tastes bitter.
- Use 1 part quinoa to 2 parts water; simmer covered for 12–15 minutes.
- Rest off the heat for 5 minutes, then fluff with a fork.
- It is ready when each grain shows a visible curled white ring.
- 200 g of dry quinoa yields roughly 600 g cooked.
- Store dry in an airtight container in a cool, dry place; refrigerate cooked quinoa and use within 3 days.
