Muskmelon seeds — magaz — are the pale, flat kernels recovered from the melon and dried, long used across North India as a garnish and thickener rather than a snack. They have a delicate, mildly sweet nuttiness that toasts beautifully and never dominates a dish. They belong to the classic char magaz group of four melon-family seeds, and they are what gives many Mughlai gravies their body: ground with cashew or poppy seed, they thicken a korma without flour or cream.

Our muskmelon kernels are recovered from selected fruit, then washed, dried and hand-sorted under controlled conditions to remove shell fragments and ensure a clean, uniform kernel.

How to Use
- Ground into Mughlai gravies — korma, navratan and shahi dishes — as a natural thickener

Directions of Use
- Dry-roast over low to medium heat for 2–3 minutes until fragrant — they scorch quickly.
- For gravies, grind to a smooth paste with a little warm water or milk before adding.
- A typical serving is 1–2 tablespoons (15–25 g).
- Add ground seed towards the end of cooking so the gravy does not split.
- Store in an airtight container in a cool, dry place, away from sunlight.
- Refrigerate after opening in warm or humid weather, as the natural oils can turn.
