Flax seeds — alsi in Hindi — are small, glossy brown seeds with a firm shell and a warm, nutty flavour that deepens considerably when toasted. They are the richest plant source of alpha-linolenic acid, the plant form of omega-3, and they carry a substantial amount of soluble fibre. One practical note matters more than any other with flax: the whole seed passes through largely intact. Grinding, or at least crushing, is what makes it useful — which is why alsi has traditionally been dry-roasted and pounded into chutney powders across India.

How to Use
- Dry-roasted and ground into alsi chutney powder, as is traditional in Indian homes
- Ground and stirred into smoothies, porridge, curd and dal
- Baked into breads, crackers, rotis and muffins
- Soaked to form a gel used as an egg substitute in vegan baking
- Sprinkled over salads and grain bowls after toasting
- Used to make flax raita and traditional podi mixes
Directions of Use
- Grind before eating — whole flax seeds pass through undigested and give you little benefit.
- A typical serving is 1 tablespoon (about 10 g) of ground seed per day.
- Grind in small batches; ground flax oxidises within days, whole seed keeps for months.
- Dry-roast lightly over medium heat for 2–3 minutes before grinding, to deepen the flavour.
- As an egg replacer, mix 1 tbsp ground flax with 3 tbsp water and rest 5 minutes.
- Drink plenty of water — flax is very high in fibre.
- Store whole seed airtight in a cool, dark place; refrigerate anything ground.
