How to Use
- Roasted potatoes, root vegetables and sheet-pan dinners
- Rubbed into marinades for grilled and roasted dishes
- Baked into focaccia, breads and savoury biscuits
- Infused into olive oil, butter, salt and vinegar
- Simmered in soups, stews and tomato sauces
- Brewed as a herbal infusion, alone or with lemon
Directions of Use
- Use about one third the quantity of fresh rosemary — dried is far more concentrated.
- Crush lightly between your fingers before adding, to release the oils.
- Add early in cooking so the woody leaves soften and infuse.
- For an infusion, steep 1 teaspoon in 200 ml of hot water for 5 minutes and strain.
- Store in an airtight container away from heat, light and moisture.
- If you are pregnant or on medication, keep to normal culinary quantities.
